Notes from King Chiikawa
Mentaiko (明太子) is one of Fukuoka's signature local specialties, consisting of pollock roe seasoned with chili and other spices. Originally inspired by Korean cuisine and popularized in Hakata, it has become one of the city's most iconic foods and a staple regional souvenir.
